This should have been my Valentine’s Day post instead; it’s shaped like a ♡!
I ketofied Gordon Ramsay’s Chicken Parmesan video on YouTube and it turned out 👌great👌! I couldn’t find any measurements or a recipe, so I literally had to just guess at everything. But here’s ≈roughly≈ what I did!

This was ALWAYS what I would get at Taco Bell, and now we made them low carb! It’s a modified version of what you may know as “fat head dough”. We always leave out the cream cheese to not only save carbs/calories, but to make the dough less sticky and therefor easier to work with.
In the chalupas are chicken, lettuce, tomato, shredded cheese, and sour cream. They were also fried in bacon grease. As the toppings are all to taste and not part of a recipe, the macros and directions below are for the chalupa shells only.
1½ cups shredded mozarella
¾ cups almond flour
¼ cup bacon grease (or frying oil)
Preheat oven to 350°F.
Melt mozarella and egg in microwave for one minute.
Add almond flour.
Separate dough into 4 portions and roll out into circles. Bake 15 minutes.
Heat bacon grease (or oil) in a small pan on medium-high.
Add chalupas to grease (or oil), fry 1 minute per side or until desired crispness.
Remove from pan and lay on paper towel to soak up the excess grease. Fold the dough in half to solidify the shape. Repeat x 3.
Fill with toppings.

We’ve never tried putting lettuce on a pizza until now! #sohealthy Usually our Mexican pizza looks like the last picture, (just cheese, meat, tomato and nacho cheese) and DAMN was it good even then. I couldn’t imagine this without the nacho cheese/queso sauce, though. It adds so much flavor!

Zero carb chicken crust dough recipe | Keto Connect
½ lb ground beef
Seasoning to taste
3 slices American Cheese, torn into pieces
½ tbsp bacon grease
2 tbsp salsa
½ cup shredded cheese
Instructions (after making the crust above):
Brown ground beef, add onion and seasoning to taste.
For the nacho cheese, combine bacon grease, American Cheese and salsa in microwavable bowl and heat for 1 minute. Stir and microwave another 30 seconds.
Spread nachos cheese onto the cooked dough then top with ground beef.
Sprinkle with shredded cheese and bake 5-10 more minutes, or until cheese melts.
Top with lettuce and tomato.
We finally tried the famous 👉NO CARB👈 chicken crust pizza recipe from Keto Connect! The number of carbs saved switching to chicken crust from what’s known as “fat head” dough (read about ‘fat head’ dough here) is HUGE. I really thought this would cost a lot more to make since you use chicken instead of almond flour, but with the products we buy – it’s only 9 cents more ($2.00 vs $2.09). So it’s 0 carb (vs 14 for ‘fat head’ dough), it’s much easier to make, and it adds even more flavor.
