Steak Jerky

Can one be “in love”…with a food? My boyfriend got a dehydrator for his birthday from his amazing Mom and he made two types of jerky. This recipe is for the steak jerky, which is my latest OBSESSION. His favorite was the ground beef sticks (the red ones, recipe coming soon!). Talk about Christmas present ideas; a dehydrator is a FANTASTIC gift. The macros aren’t exact (are actually lower than shown) as marinade is lost in the process, it depends on thickness, number of slices, etc.

He changed a couple ingredients to make it keto (and spicy), but we used Alton Brown’s recipe here.

Ingredients:
2¾ lbs top round roast
1 cup Worcestershire sauce
⅔ cup Soy Sauce
3 tsp ground black pepper
3 tsp onion powder
1½ tsp liquid smoke
2 tsp red pepper flakes
6oz chopped jalapenos in juice

Directions (with dehydrator):
In large bowl combine all ingredients except the steak.
Cut steak to desired size/thickness. (roughly ¼ inch thick, 1 inch wide made ≈100 pieces). Submerge jerky slices one by one into the marinade, transfer jerky and marinade to ziplock bag. Remove excess air, marinate for ≈10 hours in fridge, turning bag over half way through. (We keep the bag in a baking dish in case of leaking.) After 10 hrs, preheat oven to 375°F. Place slices on a cookie sheet (touching is ok, not overlapping). Bake 10 mins to ensure meat reaches 160°F internally. Place slices (not overlapping) on dehydrator shelves, sprinkle additional red pepper flakes, set to 160°F for ≈4 hours depending on thickness.
