Nacho Salad

Similar to the “Nacho Cheese Sauce” a few posts back, but with the cheese and ground beef ratios swapped! ↔️ Some people might call this a taco salad, but with our homemade nachos cheese sauce being the star of the show along with the crunch of homemade parmasan crackers, this deserves NACHO status.

Based on the products we used, the cost of these ingredients will be roughly $5.13 and make 2 servings.
Per serving:
Fat – 53.8g
Total carbs – 5.9
Net carbs – 5g
Protein – 68.9g

1 cup shredded parmesan
1 tbsp red pepper flakes
½ lb ground beef
Chopped onion and seasoning to taste
2 slices American Cheese
1 tbsp bacon grease
1 tbsp low carb salsa

Preheat oven to 375°F.
For the crackers, spray Whoopie Pie or Muffin Top Pan with baking spray or use bacon grease.
Fill 12 Whoopie Pie Pan cavities with shredded parmesan until you can’t see the bottom.
Sprinkle with red pepper to taste.
Bake for 13 minutes.
Meanwhile brown the ground beef, add onion and seasoning.
For the cheese sauce, melt American Cheese, bacon grease and salsa in the microwave for 1 minute.
Stir and microwave another 30 seconds.
Chop lettuce and tomato, make salad.
Scoop with the crackers or crumble them up on top.
