Mini Mexican Pizzas

This is one of the meals we have ALL the time. Really any excuse to put sour cream, guacamole, and our homemade nacho cheese sauce on something. 😁 Now that I think about it… they’re pretty much an open faced/loaded version of our Micro Tacos! 😮 That explains SO MUCH! 😄

Macros and pricing:
Based on the products we used, the cost of these ingredients will be roughly $5.42 and make 12 servings/pizzas.
Per pizza:
Fat – 12.7g
Total carbs – 1.2g
Net carbs – 1.1g
Protein – 13.9g

Crackers:
1 cup shredded parmasan (3 lb bags at Costco)
Preheat oven to 350°F.
Fill 12 whoopie pie pan cavities with shredded parmasan until you can’t see the bottom.
Bake for 13 minutes.

Toppings:
1 lb ground beef
Chopped onion and seasoning to taste
5 slices American Cheese, torn into pieces
½ tbsp bacon grease
2 tbsp salsa
1 cup shredded cheese
Guacamole and sour cream to taste

Instructions:
Brown ground beef, add onion and seasoning to taste.
For the nacho cheese, combine bacon grease, American Cheese and salsa in microwavable bowl and heat for 1 minute. Stir and microwave another 30 seconds.
Spread nachos cheese onto each cracker then add ground beef.
Sprinkle with shredded cheese and bake 5-10 more minutes or until cheese melts.
Top with guacamole and sour cream.
